Miner's Meal
This is one of the more well-known wildflowers, the deliciously edible Miner's Lettuce. Just as sailors needed to prevent scurvy, so did the Gold Rush miners and they ate Miner's Lettuce to get Vitamin C. We eat the moist, tender leaves early in the spring; the plants growing in deep shade are more delicate and flavorful. This is another plant taken from North American and introduced in Europe.
